Homemade Corndogs

My son loves Corndogs :) He would always request S&R's Foster Farm Honey Crunchy Corndogs and will never seem to get satiated with it. So I was always on search for that perfect recipe that will replicate the Corndogs my Mikko is happy with. Fortunately I came across this easy recipe that has the approval of my son's palate :) weeeeeee :P

Ingredients:
1 cup Cornmeal
1 cup All Purpose Flour
1/4 teaspoon Salt
1/8 teaspoon Black Pepper
1/4 cup white sugar
2 tbsp Honey (Optional)
4 teaspoons Baking Powder
1 Large Egg
1 cup milk ( I used Fresh Milk)
vegetable oil for deep frying
cornstarch for coating
12 Jumbo Chicken Franks
12 Small bamboo skewers

Procedure:
1.  In a medium bowl, combine cornmeal, flour, salt, pepper, sugar, honey and baking powder.  Stir in egg and milk.

2.  Preheat oil in a deep medium saucepan over medium heat. 

3.  Dry off the franks on paper towels then toss them in cornstarch, coating them completely.  (This is necessary to ensure that the batter will stick to the franks.) Insert a bamboo skewer into each frank.

4.  Dip the frank into the batter and swirl to coat it evenly.  Let the excess drip off.

5.  Deep fry Corndogs one at a time until lightly browned.  Drain on paper towels.


Corndogs for my Mikko and his bestfriend Brence who is sleeping over tonight :)
